RECIPE 1 Crunchy pumpkin and carrot crackers
Ingredients:
1 cup pumpkin puree (make sure it is natural and with no added sugar).
1 grated carrot
1 cup oat flour (you can make it by grinding oatmeal in a food processor)
1 tablespoon olive oil
1 teaspoon turmeric (optional, for its anti-inflammatory properties)
Instructions:
Preheat the oven to 180°C.
In a bowl, mix the pumpkin puree, grated carrot, olive oil and turmeric.
Add the oat flour little by little until you obtain a manageable dough (you can add more or less flour as needed).
Roll out the dough with a rolling pin and cut out the cookies with fun molds or simply form small balls and flatten them.
Place the cookies on a baking sheet and bake for 20 minutes or until crisp.
